Sam Carmella

Founder and President

As a seasoned executive in the Consumer Foods business, Sam has spent nearly 40 years with notable companies like Heinz, Smuckers, New World Pasta, and others. Sam is passionate about filling the need for consumers seeking convenient, delicious, oil-free meals. He lost both his parents to heart disease and wants to make a difference in the lives of people who want to take action to transform their heart health. As information continues to come out about the risks of oils in your diet, Sam is dedicated to making your journey as convenient and as enjoyable as possible so you will stay committed to eating an oil free, meat free, dairy free diet. As Sam embarked on the diet himself, the hardest part was dinner time. Breakfast and lunch were easy, oatmeal in the morning, fruit or a salad with vinegar at lunch. But dinner takes some planning and effort, especially if you are used to hot, hearty, traditional comfort meals. That’s what gave him the inspiration to start N’oils. If it doesn’t feel like you are on a heart healthy diet, you are more likely to continue and succeed in changing your health. When you go to a grocery store, there is almost ZERO chance you will find a convenient frozen meal that doesn’t have either Oil, Meat, or Dairy. It just doesn’t exist!! N’oils is here to be the pioneer and change that! As an extra bonus, Sam started this company with his wife and 3 daughters helping him bring the vision to life, which makes this journey extra special and meaningful.

Mary Ann Mangini

Vice President Internal Affairs

Sam’s wife, Mary Ann is passionate about her health.  She exercises daily and has an extremely healthy diet and lifestyle.  She is an inspiration to the team and provides much needed guidance and motivation.  Mary Ann is the genius behind the name “N’oils” for our branding.  Mary Ann was an exceptional student in high school and college, finishing 1st her class at Grove City College.  She continues to be a student of life, seeking the healthiest foods and consumer products.  She understands ingredients and continues to research the impact of harmful chemicals on the body.   

Chelsea Carmella Felt

Vice President Operations

Sam’s oldest daughter, Chelsea is a nurse and mother.  Chelsea was President of her nursing class in college and having worked in hospitals in various capacities, has seen firsthand, the impact heart disease has on people and their families.  Chelsea is instrumental in making sure our packaging, shipping, and marketing efforts run smoothly and are consistent with our commitment to quality and consistency.  Her experience founding Moonlight Mill on Etsy was invaluable to helping N’oils get established. 

Kristin Carmella

Vice President Information Technology and Communications

Sam’s middle daughter, Kristin lives on the west coast and is the architect of our web design and social media platforms. With a Bachelor of Fine Arts degree from Pont Park University, Kristin leads our efforts to reach consumers and communicate with media outlets.  As a yoga instructor and a planner for an outdoor adventure company, Kristin is keenly aware of the needs of active people of all ages seeking healthy food options.  She works closely with her sisters in developing and perfecting recipes to bring to market.

Rachel Carmella

Vice President of Culinary and Government Regulations

Rachel, Sam’s youngest daughter, graduated from the University of Tennessee with a major in Nutrition and Dietetics and went on to receive a Masters in Medical Science from Lake Erie College of Medicine.  She has traveled the world teaching nutrition to children living in developing countries and underserved communities in the USA.  She also is passionate about Culinary Arts and recipe development.
